Readers of The Bitten Word cooked every recipe in the September 2013 Bon Appetit magazine. Here's their take on Cornmeal Crepes with Figs and Pears.
Emily: Very easy to make and quite elegant. Honey adds just enough sweetness. This was my first experience with fresh figs. They melt in your mouth with a delightful flavor! I followed the recipe exactly.
AliceToo: Finished product was tasty but I had some issues...the batter was too thick at first (my cream was really thick so that was probably the problem) so I added more milk. Flipping the crepes was not easy... burned fingers! Next time I will maybe just use all milk in the batter. But I'm glad I got this recipe...I needed to use my crepe pan for something other than tortillas!
Scott: I am a positive person by nature. I can't stand those snarky, mean spirited reviews that show up on recipe websites, written behind the cloak of internet anonymity. I really wanted to like this recipe, but regrettably did not. The cornmeal in the batter made the crepes tough and chewy, turning them into a weird tortilla-crepe hybrid. The other ingredients seemed to not be carefully considered and the recipe as a whole didn't work well together, at least for me. I do have to admit a bias against figs. For something that looks so cool, I don't think figs taste all that good, which pretty much sums up how I feel about this recipe. As an aside, I looked up the restaurant that is owned by the chef who authored this recipe. I noted that this dish is not on the menu. Sure is pretty, though.
Erica: Albeit I was intimidated by my first attempt at crepes, the final product was delicious! The cornmeal added a new texture and the crepes weren't overly sweet. The pears, pistachios, and figs were a great combo and I would definitely make these again. Another possibility, cut some of the sugar from the batter and make a savory option. My only note for the recipe, it makes more whipping creme than one would need, but too much whipping creme is never a problem...
Vicki: When I saw the word "crepes" I was intimidated, but as the recipe promised, these were much easier than expected. Well, I burned the first two but then totally got the hang of it. They're delicious! Definitely something I'd make again, and a good dish to impress friends with. The recipe suggests serving with figs, pears, honey, and pistachios; I preferred just the latter two ingredients, though I think pretty much any toppings would work.
Carrie: I have never made crepes before and it was so much easier than I thought it would be. This was such a fun recipe to make!
Jay: The crepes are very tasty but are even better if you melt some Taleggio cheese inside (I made some with and some without). The fruit didn't add much but the pears would probably be great if baked.
